Ketchup-Portland Ketchup like ============================= Nice thick flavorful ketchup like Portland Ketchup Ingredients: - 3 lbs tomatoes (12oz tom paste if using canned) - 1 tsp salt - 1 tbsp garlic powder - 1/2 cup brown sugar - 1 tbsp onion powder - 1/2 cup white vinegar or apple cider vinegar - 1/4 tsp allspice - 1/8 tsp ground cloves - 1 tsp worstshire sauce - 1/8 tsp Cayenne powder Instructions: 1) Peel tomato (freeze + peel or boil + cold water method). Cut in half or quarter (Skip if using tomato paste) 2) Boil tomato 30 min on med heat (Skip if using tomato paste) 3) Smash or use stick blender if too thick / chunky (Skip if using tomato paste) 4) Add all spices to tomatoes (Add tomato paste here if using) 5) Continue simmer on med until desired thickness (Receipe says 4-6 hrs, but it took less than one for me) 6) From here can or cool and put in fridge (Flavor better if sits 4 hrs -- if it didn't simmer for long hrs above) TIP: If too thick, add water or vinegar in small amounts + stir. This is expected to be thick.
